Sheep's neck in Clay Terracotta pot

Once upon a time in a tavern in Lamia

  Method  

  1. In the mortar, make a paste of pepper, garlic, olive oil and vinegar.

  2. Sprinkle on the meat and give it a good massage.

  3. Place in a container with a lid, close and leave in the fridge overnight.

  4. The next day turn on the oven at 180 degrees without the fan.

  5. Cut the onion into slices

  6. Make a sticky dough with flour and water to seal the lid of the hull.

  7. Season the lamb with coarse salt and place it in the hull

  8. In the container you had the sheep,  place the onions and mix them well to get the paste that is left on the walls.

  9. Put the onions in the hull.

  10. Cover the rim of the hull with the dough you made and close the lid.

  11. Bake for three hours.

  12. Cut the potatoes into slices and place them in a pan on baking sheet that you have greased with oil.

  13. Apply olive oil with a brush, salt and bake at 180 degrees until they get a nice color.

  Ingredients  

For the marinate

2gr black pepper

7 cloves garlic

2 Tblspoon red wine vinegar

3 Tblspoon extra virgin olive oil


Next day

3-4 onions in rings

coarsed sea salt
