Melomakarona, Greek traditional Christmas treats

Christmas honey biscuits from Greece with honey and walnuts

  Method  

  1. Put  all the ingredients for the syrup in a saucepan and once it boils,  boil it for 2 minutes. Remove it from the heat and let it cool down completely.

  2. Put all the liquid ingredients in a large bowl and mix them.

  3. In a smaller bowl place all the solid ingredients and mix them.

  4. Add the solid ingredients in three batches gradually to the liquid ingredients and mix gently.

  5. As soon as the last batch of the solid ingredients is in, use your hands to knead the dough. As soon as the ingredients are combined, stop the kneading, to prevent the oil from separating.

  6. Shape them into their classic shape, 35 grams each and place them on a baking sheet with parchment paper.

  7. Bake them in a preheated oven at 180 degrees without the fan for 20 to 25 minutes, until they get a nice color.

  8. As soon as they come out of the oven and while they are hot, dip them into the cold syrup for 20-25 seconds and leave them on a rack to drain.

  9. Place them on a plate and sprinkle each layer with honey and crushed walnuts mixed with crushed roasted sesame seeds.

  Ingredients  

For the syrup

600ml of water

800 grams of sugar

300 grams of honey

4 cloves

3 cinnamon sticks

1 orange quartered


Dough


For the liquid mix

500 ml freshly squeezed orange juice

400 ml sunflower or corn oil

200 ml olive oil

Zest of 2 large oranges


For the solid mix

1250 g all-purpose flour

180 g fine semolina

60 g powdered sugar

½ teaspoon grated cloves

10 g cinnamon (1 tbsp)

¼ tsp nutmeg

10 g baking soda (1 tsp well filled)

120 g coarsely grated walnuts


Honey and walnut for sprinkling
