Lagana, Traditional Greek flat bread with sesame seeds

A very tasty and very easy flat bread to make

  Method  

  1. In a bowl I place the water, the yeast and the sugar. Stir, cover and leave for 20 minutes ..

  2. Mix the flour with the salt and add the olive oil and the yeast

  3. Knead vigorously for 12 minutes by hand or 7 minutes in the mixer.

  4. Grease a bowl and place the dough inside. Cover it and let it double in volume for 70 to 80 minutes.

  5. Mix the water with the sugar

  6. Take the dough out of the bowl and on a floured surface divide it in two.

  7. Pour enough sesame seeds in baking paper and spread the dough in the shape of lagana.

  8. Spread with saugar water and sprinkle with sesame seeds.

  9. Let it rest for 20 minutes.

  10. Turn on the oven at 220 degrees in the air.

  11. Press with your fingers the whole surface of Lagana to make bumps.

  12. Bake for about 20 minutes.

  Ingredients  

For 2 flatbreads

600 g all-purpose flour 

420 ml of warm water 

12 g dry yeast 

12 g salt 

20 g honey 

2 tbsp olive oil 


Topping

60 ml of water 

1 tbsp honey or sugar 

150g sesame seeds
