Extra large 500gr

  Method  

  1. Chop the cabbage and the onion

  2. Cut the apples into small pieces

  3. Heat the butter in a pan and add the onion, sugar and apples and let them soften

  4. Add the cabbage and two tablespoons of vinegar, mix and let it cook on medium heat for 10 minutes

  5. Add the wine, bay leaves, cloves, water, salt and pepper. Mix it, cover it with the lid and let it boil for about 45 minutes until the cabbage is soft.

  6. In a little cold water, dilute the flour and add to the cabbage after it has softened

  7. Clean and cut the meat as in the video

  8. Boil the potatoes

  9. In a container large enough to fit the steak, place the eggs and the other pepper and beat them lightly with a wire whisk. Also add the thyme.

  10. In another container place the breadcrumbs. Pass the meat through the breadcrums, then in the egg mix and finally again on the breadcrumbs

  11. Put the steaks in the fridge until we prepare the other side dishes

  12. Prepare the mash by adding salt, pepper and nutmeg to the potato and butter

  13. In a pan place the butter and a little oil so that the butter does not burn. As soon as it is hot, place the steak inside and fry it for about 4 minutes on each side

  14. Once ready, place it on absorbent paper

  15. Serve it with the mash and the cabbage

  Ingredients  

For the steaks

Butter clarified for frying (100 - 120 g) 

3 eggs 

breadcrumbs 

some olive oil or vegetable oil 

Fresh or dry thyme 

salt and pepper


For the cabbage

1 kg finely chopped red cabbage

60 g butter 

1 onion (120g) 

2 sour apples 

250 ml of water 

2-3 tbsp vinegar 

1 tablespoon of sugar 

1 bay leaf 

2 teaspoons of flour 

40 ml red wine 

3 cloves 

salt and pepper


For the mashed potatoes 

800 g potatoes peeled 

200 ml of milk 

70 g butter 

Salt

pepper

nutmeg
