Gamopilafo a special dish from Crete with rice and mutton

The famous rice dish from Crete prepared for weddings

  Method  

  1. Cut the meat into portions and season with salt

  2. In a large pot of water, place the onion cut in qurters

  3. Once it boils, place the meat inside, cover and let it boil while skimming

  4. Leave the lid half open and simmer on low heat for 1 hour.

  5. Top up if needed with hot water and boil for another half an hour.

  6. Add the wine and let it boil

  7. Remove the meat from the water and season it with salt and pepper

  8. Drain the broth and taste it. Season as needed

  9. Boil the broth and add the rice, stirring constantly for 20 minutes

  10. 1 minute before removing, add the lemon juice

  11. Remove and add the zest and butter

  12. Stir, cover with a towel and let rest for 3 minutes before serving

  Ingredients  

For 8 servings of homemade wedding risotto we need:

1.500 g mutton from the leg in portions

1.500 g country chicken, cut into portions

1 tablespoon coarse salt

1 cup of dry white wine

6 l cold water 

1 onion quartered

+1 l hot water

For the risotto 

1,5 liters of the meat broth

2 cups of rice (arborio) (410g)

zest of half a lemon (untreated)

Juice of 2 medium lemons. 

1 tablespoon of melted butter
